Low Carb Pizza Stew!!!


Pizza stew is a great way to use up all those leftover Italian pizza toppings without adding any carbs to your diet. This soup takes as little as 30 minutes and uses hardly any dishes. No deep dish here! Just your favorite vegetables, mushrooms, pepperoni, Sicilian chicken and the mozzarella cheese is optional…


INGREDIENTS

2 (15 ounces) cans of diced tomatoes
½ cup black olives, sliced
1 cup onion, diced
1 cup red bell peppers, diced
1 cup green bell peppers, diced
1 cup zucchini or mushrooms, diced (or both!)
1 clove garlic, minced
1 cup vegetable broth
2 teaspoons oregano, dry
1 teaspoon Himalayan salt
½ teaspoon freshly ground black pepper
2 Tablespoons fresh basil, chopped
¾ cup mozzarella cheese
¼ cup Parmesan cheese
1 cup diced chicken or pepperoni (optional)
2 Tablespoons tomato paste

Preparation Method
In a pot add the tomatoes, olives, onion, red and green bell peppers, zucchini or mushrooms, garlic, vegetable broth, oregano, salt, pepper, and any meat.
Cover and cook on medium-low for 20 minutes.
Add the mozzarella and Parmesan cheese and stir until melted.
Serve into 4 bowls and garnish with extra cheese and basil.
